We all need a few easy weeknight dinners in our arsenal. I’ve shared three tried and true favorites that my family loves. There aren’t a million ingredients, and two of them you can throw in the crockpot while the kids eat breakfast.
CALZONES
This insanely easy recipe idea has gone viral over on my Instagram, and rightly so. Its tasty, quick and my go-to dish when it comes to meal trains.
What You Need:
- 1 can refrigerated pizza dough
- Marinara or pizza sauce
- Shredded cheese
- Your toppings of choice
- Optional: Italian herbs/seasoning
- Optional: olive oil
Directions:
1) Roll out refrigerated pizza dough and cut 8-10 slits on each side.
2) Layer with hour choice of toppings and seasonings.
3) Braid the dough slits over. Brush a little olive oil on top.
4) Bake at 400° for 15 mins!
So easy. Tag me if you try it!
CROCKPOT CHICKEN NACHOS
These are a favorite around here, and I love being able to prep everything in the morning and go about my (very) full day. This recipe is also incredibly, so everyone can kind of make it their own.
1) Add 1lb of chicken breasts (they can be frozen)
2) Add 1 package of taco seasoning
3) Add 1 can of tomatoes and green chilis (also called Rotel)
4) Add 8oz of cream cheese
5) Add black beans (we like to use Bush’s Taco Fiesta Sidekicks)
6) Cook on high for 5 hours
7) Shred chicken
8) Cook on high for an additional hour
Serve on top of tortilla chips, and add in your fav nacho toppings like cheese, lettuce and jalapeños. This recipe also works well for tacos and quesadillas.
CROCKPOT BBQ PORK CHOPS
Another Patterson crowd pleaser right here. I typically serve it up with roasted potatoes or a stovetop rice mix. Frozen sautéed veggies for the win!
What You Need:
- 2lbs Thick Cut Boneless Pork Chops (thinner ones dry out super fast)
- 1 Bottle BBQ Sauce (we prefer THIS one)
- 1 Large Onion, quartered
- Salt
- Pepper
- Onion Salt
- 21 Seasoning Salute HERE
- Parsley (dried)
Directions:
1) Add your pork chops to the crockpot
2) Season liberally (or to your taste) with parsley and seasonings
3) Add BBQ sauce
4) Add onion
5) Cook on low for 5-6hours
