Crockpot Chicken Verde

Hey, friends! Coming in hot with another super simple crockpot recipe that frequents our kitchen table. We almost always do a crockpot meal on Mondays as that is our busier evening with dance. It is always so nice to come home a house filled with yummy aromas.

I first came about this recipe when I was a member of FIT4MOM, and I was participating in their Body Back (now called Body Well) program. They give you a book of cleaner recipes, and while I’ve adapted it to our tastes, this is one that stuck with me. Below you’ll find everything you need to recreate this recipe.

Note: If you’ve made my Crockpot Beef Roast, then you already know I am a huge fan of using slow cooker liners for the easiest cleanup—I can’t stand scrubbing my crockpot–but I totally blanked during my grocery order and forgot them. Take my advice, and get the liners LOL!

Ingredients:

  • 1.5 lb Chicken Breasts
  • 2 12oz Jars of Salsa Verde (here) Trader Joes also has yummy salsa verde
  • 1 Can of White Beans (here)
  • 1 Cup of Frozen Corn (here)
  • 1/2 Onion (chopped)
  • 1 Tablespoon Garlic Powder (here)
  • 1 Teaspoon Cumin (here)
  • 1 Teaspoon Chili Powder (here)
  • Salt and Pepper (to taste)
  • (optional) Steamed Rice (here)

Directions:

  1. Dump chicken breast into the crockpot.
  2. Rinse your white beans and then put them into the crockpot, along with remaining ingredients.
  3. Cook on low for 5-6 hours.
  4. Use two forks to shred the chicken.
  5. Serve over steamed rice, top with any combo of cheese, avocado, cilantro and/or green onions.

Tips:

  • If you prefer a juicer cut of chicken, you could easily substitute the chicken breasts with boneless skinless chicken thighs.
  • Only have frozen chicken? No worries. Just be sure to use the full 6 hour cook time.
  • This is an insanely versatile recipe, so if you don’t care for it served over rice, try serving the chicken verde in warm tortillas, or over a bed of veggies.
  • For more of a spice, go for the “hot” salsa verde, or add a handful of chopped jalapeños to the pot.
