The Best Beef Roast

Hey, friends! I shared a peak of my very favorite beef roast, from Christmas dinner, and I was flooded with DMs about the recipe–so here it is. Oh, and I promise not to bog you down with a post about my entire life story before giving you the actual recipe LOL. I will say though that my kids call this recipe Roast “Beast” in reference to the infamous dinner from The Grinch. I’ll never ever ever correct them.

Ingredients:

  • 3 lb Chuck Roast (the more marbling the better)
  • 2 Tablespoons Cooking Oil
  • Salt and Pepper
  • 2-3 Large Carrots (thick sliced)
  • 2 lbs Potatoes (cubed)
  • 1 Onion (quartered)
  • 1 Can of Beef Broth
  • 1 Tablespoons of Worcestershire sauce
  • 1 Packet of Italian Seasoning (here)
  • 1 Packet of Ranch Seasoning (here)
  • 1 Packet of Beefy Onion Dip Mix (here)

Directions:

  1. Season your roast with salt, pepper and half the packed of Italian seasoning.
  2. In a large skillet, add the cooking oil over medium-high heat.
  3. When the pan and oil are hot, place the chuck roast in the hot oil and cook for a minute or two until the side facing down on the pan, has a good brown sear. Then turn the roast and repeat for each side until all sides are brown.
  4. Remove the roast and place it in the slow cooker.
  5. Add the potatoes, onions, and carrots.
  6. Pour the broth and Worcestershire over the roast and vegetables.
  7. Add the remainder of the Italian seasoning, ranch seasoning and beefy onion seasoning.
  8. Cook on low for 8 – 10 hours or on high for 4 to 5 hours.

TIPS:

  • Use a crockpot liner for easy clean up. Ive been using these liners for YEARS and they are a game changer. No more scrubbing the inside of your slow cooker.
  • Don’t skip the pan searing. I know it’s tempting to cut out that extra step (and the dirty pan that comes along with it) but having that sear is EVERYTHING when it comes to the flavor of your roast. Don’t skip it!
  • I peel my carrots and potatoes, but you don’t have to because the slow cooking processes cooks them down to edible perfection.
  • Try to find beef broth with no added salt. The seasoning packets have plenty of sodium, so that’s a way to eliminate some.
  • These are so yummy served with bread rolls–trust me, you’ll want to sop up the beefy gravy.

It’s packed with flavor and my entire family loves it. I’m lucky if there are any leftovers. I love how it’s easy to make. I’m able to make a fabulous meal while still being able to tend to my little ones. Thank you for sharing.
