Crockpot Zuppa Toscana

Hey, friends! Zarie helped me prepare this favorite meal of ours today, and I am pumped to share it with you. Zuppa Toscana (translation: Tuscan Soup) is one of those recipes that feeds the soul. You eat it slow and savor every bite. Both my girls and my hubby gobble this winning recipe up!

I’ll spare you the insanely wordy post, and just give you the recipe 😉 Enjoy!

Ingredients:

– 1lb of ground pork
– 1 cup of diced onion
– 3-4 cloves of minced garlic (or more, because you really can’t have too much)
– 4 cups of chicken broth (we used reduced sodium)
– A couple of cups of cubed red or russet potatoes
– 6 slices of bacon, diced
– 4 stalks of kale (the leaves only, thinly sliced)
– 1 cup of heavy cream (we use 1 can of coconut cream for an AMAZING dairy-free option)
– Season with: salt, pepper, red pepper flakes
– Shaved parmesan cheese

Directions:

  1. Brown your pork, and set aside.
  2. Place onion and bacon into skillet + sauté.
  3. Place pork, onion, bacon + garlic into the crockpot, along with remaining ingredients.
  4. Cook on low for 5-6 hours.
  5. Add in kale and cream and cook for an additional hour.
  6. Sprinkle with parmesan before serving. Also, tastes amazing with crusty bread for dipping!
