So, as you all know, I am always aiming to share with you all the fun little memory making fun that I do with my family. You also know how much we like our themed snacks…every Friday is Patterson Movie Night, and there is almost always popcorn involved. I made this fun popcorn, last year, around St. Patricks Day, and it was a huge hit, so I want to share it with you! I wouldn’t even say it’s a recipe, as much as a snack cheat sheet. Add a couple glasses of Leprechaun Milk, and you’re all ready to celebrate St. Paddy’s with the kiddos.
Ingredients:
- Freshly popped popcorn. You can snag our awesome air popper HERE
- Rainbow Sprinkles
- Candy Melts (ALLERGY MAMA HACK: You can buy THESE vegan candy melts, if your child is allergic to dairy—most other melts contain some form of it)
- Food Coloring OR You could just pick up colored candy melts
- Lucky Charms cereal
- Your choice of milk
You totally don’t need these adorable rainbow plates, for the Pop of Gold, but you kinda do. You can buy them HERE , and they’re so freaking cute. My girls love little touches like that. Sometimes adding a little magic is as easy as fun paper plates.
Half the fun of this is letting the girls pick out (snack on) the marshmallows from the cereal. Zarie is a master at this. I don’t really have exact amounts, but I would say around a cup of marshmallows is plenty. Adjust to your hearts desire.
Directions:
- Pop your popcorn and spread it out evenly on a lined (easy clean up) baking sheet.
- Melt your candy melts according to the package instructions; half a cup is plenty.
- If you’re using white melts, stir in a couple drops of food coloring. We used two drops of red to make bubblegum pink, but green would be so fun, too!
- Drizzle the melted candy all over your popcorn.
- Add on your layer of marshmallows.
- Finish your Pop of Gold with a layer of rainbow sprinkles.
- Let sit until the candy hardens–about 15 minutes. Enjoy!
How cute is this popcorn? My littlest sister-in-law (9) helped make this recipe, and she had SO much fun with it! She also informed me that Pop of Gold would be an excellent way to trap a leprechaun. Apparently, in grade school, kiddos engineer fun leprechaun traps, around St. Patricks Day. How cute would it be to send a bowl (or some baggies) of this to school with your kiddo? (If you do this, totally tag me. It will be so dope.)
The Leprechaun Milk is as easy as mixing your milk of choice with green food coloring. If you wanted to go for a sweeter treat, you could mix in green sugar sprinkles, and they’ll dye and sweeten your milk for you.
You can get the mini popcorn boxes HERE for movie night. Full Disclosure: We have had these popcorn boxes since Raegan’s first birthday party! It was carnival themed, and we had some leftovers. I will sometimes throw some of these in my purse when we go to the movie theater, and use them to distribute individual amounts of the larger popcorn bucket. No fights over who gets to hold it.
