We are clearly a family who loves tacos. If you missed it, we just threw our one-year-old a First Fiesta! One of my three-year-old’s very first words was “salsa”, and I’ll never forget how adorable she was when she said it. We like tacos. Any occasion is a good one to have tacos.
I figured I’d share my take on one of our favorites! It is so versatile. Add or remove whatever veggies/toppings you want. I LOVE recipes that can be catered to your cravings, and family size.
I am actually pretty horrible and formalizing recipes. I tend to be a “add a little of this” and “some of that” type of cook. So, I’ll try my best. It’s tacos though, so really you won’t even need much guidance!
First, Raegan and I went out to our backyard garden to grab some fresh veggies! She LOVES to help with the garden; and I love having her help. It is always an opportunity for me to throw in a little learning.
“Raegan, how many of our tomatoes have turned red?”
“Can you grab me 3 peppers?”
“Does that jalapeño pepper roll? Let’s try!”
We reinforce her learning A LOT by doing this with almost everything! Back to the tacos….
What I always start with:
- 1 egg and 1 egg white for every person who is eating (Great amount of protein, decent calorie count, still super flavorful)
- Whole wheat tortillas
- 1 teaspoon of coconut oil to warm the tortillas in (coconut oil adds the perfect amount of crispness and lite flavor)
- Bell peppers (and literally any other veggie you’re feelin’ that morning)
- Chopped kale (because it is nutrient dense, and you can’t even taste it!)
The add-ins:
- A sprinkle of cheese
- Sliced jalapeno
- Tomato
- Salsa (I prefer verde)
- Avocado
- Hot sauce or/and Sriracha
- Cilantro (mandatory)
I make everything on a big electric griddle —less dishes this way!
Scramble and season your eggs, sauté your veggies, warm the tortillas in the coconut oil, assemble + add in whatever your heart desires.
